does anyone have any idea where to hook up a ammeter? on the back side of the gauge it has a plus and minus, on the front it has discharge and charge respectively.

I would assume you just connect it to the battery. Since the battery is either charging or discharging, the meter is going to simply indicate that. Thats my 2 cents....

To hook up an ammeter, the entire charging circuit must flow through the gauge, then out to the loads personally I am going to get rid of the ammeter and put in a voltmeter it will tell me everything I need to know. As far as the plus and minus, just hook it up if it shows a constant discharge turn the wires around.

The Ammeter should take the reading of the charge or discharge of the battery passing by the magneto. The magneto enter the key swich to the position (M). Pass this wire into your ammeter. If the reading is negatif when engine "on" change the position of your wire. Should go negatif when starting your vehicule.

Forget the ampmeter, you could hook a voltmeter across the battery, the only problem with that is it will slowly drain your battery when the engine is not running unless you add a switch in one wire ,positive wire is common ,to disconnect the meter when the engine is off. Forget to turn off switch when done riding ,battery goes dead. (This could take some time depending on type of voltmeter you are using)
On a battery powered light system you could hook the meter across one of your headlights, of course if your are running with your lights off the meter tells you nothing.
If you can find a accessory terminal on your key switch, try hooking the meter positive to that terminal or wire and hook up the neg. wire from the meter to battery neg. or ground.
